MAMAs Do! Thanksgiving Dinner


For those of you who are looking to try something new for Thanksgiving dinner, have no fear, MAMAs have got you covered. Baked Cheese Grits

  • Bring 6 cups chicken broth (or vegetable broth if you want to make it ovo-lacto-vegetarian friendly) to a boil.

  • Whisk in 2 cups grits (not instant).

  • Simmer until thick, about 10 minutes and take off the heat.

  • Beat 4 eggs with ½ cup milk.

  • Temper the hot mixture into the eggs by adding a half-cup to a cup of the grits to the eggs and milk and whisk, then add the egg mixture back into the grits and whisk.

  • Add 1 lb. grated sharp cheddar, ½ cup grated parmesan, and 1 stick butter, whisking until the cheese and butter are melted.

  • Pour into buttered casserole.

  • Bake at 350 until set, about 35-45 minutes.

Orange-Glazed Sweet Potatoes

Ingredients

  • 2 lbs. sweet potatoes, cut in half or quartered

  • 2/3 cup sugar

  • 1 tbsp. cornstarch

  • 1 tsp salt

  • ½ tsp. grated orange peel (optional)

  • 1 cup orange juice (pulp-free recommended)

  • 2 tbsp. butter or margarine

Instructions

  • Preheat oven to 400° F.

  • Arrange sweet potatoes in 1 ½ quart casserole dish.

  • In small saucepan over medium heat, stir together sugar, cornstarch, salt, and orange peel.

  • Slowly stir in orange juice.

  • Add butter/margarine.

  • Boil and stir for 1 minute.

  • Pour over sweet potatoes.

  • Bake for 1 hour or until sweet potatoes are tender.

“Vulgar” Rolls

Ingredients

2 cans crescent roll dough

1 8-oz. package cream cheese

1-1.25 lbs. sausage (chicken or pork, hot or sweet or a combination)

  • Cook sausage in skillet.

  • When cooked, mix in cream cheese.

  • Roll out crescent dough side-by-side and pinch the two sheets together, as well as the perforated lines in the sheets, to make one large rectangle.

  • Spread out the sausage/cream cheese mixture, then roll up the crescent dough to make one long round loaf.

  • Wrap in wax paper and chill for a few hours.

  • Remove wax paper, slice into rounds about ¾ in thick, and bake on a cookie sheet at 350 for 10-15 minutes or until browned.

“Sinful” Brownies

  • Preheat oven to 350 degrees.

  • Flatten your favorite chocolate chip cookie dough (premade store bought works great) in a layer at the bottom of a 9 x 13 cake pan.

  • Take a box of Oreos (double stuff are great) and lay them in a flat single layer on top of the cookie dough. Get them as close together as you can without overlapping.

  • Mix up your favorite brownie mix and then pour the bowl of brownies over the top of the Oreo/cookie dough layers and spread to the edges of the pan.

  • Bake at 350 degrees for 30-35 minutes until a toothpick inserted in the middle comes out clean.

You can eat the gooey goodness right away with a spoon, or let cool for a couple of hours and it will be easier to cut into servings.
